The water and baking soda really work on crusted, burnt pans.

HOWEVER.... if you burn a pan and it turns color (like a stainless pan turning grey-blue) scrubbing or destaining won't work. Taking off a layer of metal might work (sanding...steel wool....) because what has happened is that oxygen, sulfur and the steel have combined in a chemical reaction to change the surface of the steel. It's literally a new metallic chemical on the surface, not something "burnt on."

My husband let the egg pan boil dry, and it was a WMF stainless pan. It turned blue and all kinds of colors. "Darlin' you may know computers, but I know chemistry. It ain't NEVER coming off." And--it didn't.

Try letting it soak in hot soapy water overnight. In the morning you may be able to clean the scortch out. You also could purchase a stainless steel cleaner and see if that works. Always hate it when I make a mistake like that and we all do.

Perhaps course salt and a wet sponge.

I use that to clean my cast iron skillets. It does not take off the "seasoning" of the pans.

There are Youtube videos that show boiling equal parts water and vinegar on med to med. high temperature for 10 minutes to clean scorched stainless steel pans. For any residue left, SOS or brillo pads were used. Others did the same but boiled with baking soda and water instead.

It's a tough one, since there was nothing in the pan that burned ONTO the pan, but just the pan being burned.

Please let us know what works, k?

I've never done that so I'm clueless. My first thought was, as mentioned by another poster, a 'stainless steel cleaner' or to try and hit it with one of my Mr Clean Magic Erasers.

I think some of the suggestions apply more to there being some food burned onto the steel, so that's probably why they may not work. But having the steel get burned like that - ruh roh!
