I'm not a huge baker so I'm going to ask a dumb question. Just ordered new Cuisinart cookie sheets and am wondering if I use parchment paper , will the cookies still brown on the bottom?

They will bake just like they would if you put them directly on the cookie sheet. I actually get better results with the paper. The parchment paper will help them slide off the pan with ease and will make your clean up a snap. I usually replace my parchment sheet every couple of batches. This will really help preserve your new cookies sheets.

Great tip, Cat! Many the time I have fought with the last pieces being too 'rolly' to lay flat and, being the total klutz that I am, it's like a scene from the Keystone Kops.

I always use either parchment paper or a Silpat, and occasionally aluminum foil for some things, on a baking sheet. It also keeps my baking sheets that light silver-ish color. I know that the patina is ok but I like having them stay pristine.

I always use parchment paper for baking cookies. They brown well and it keeps you from having to clean the cookie sheet, plus the cookies don't stick. Love it. Sometimes I lightly spray the corners of the cookie sheet before putting down the parchment paper, as it helps the paper stay in place.

Oh, I so agree that sheets are another great idea - as long as you use mostly one size. What's nice, too, is that they store flat.

For me, the rolls are more practical except that I have a bunch of 10" ROUNDS that I use for certain things. The ones I have (I got at either KA or Amazon), come in a plastic zip-lock type bag with a round piece of cardboard to keep them flat so I can just slide it into the side of a tall cabinet.

Man, if I had to cut rounds, this klutz would be in big trouble. hehe - probably wouldn't have any fingers left.
