Don't use it much but Colgin is the brand I use. Maybe it could be replaced with smoked salt or smoked paprika.

Liquid Smoke?

I DVR Dr. Oz every day and watch the segments that interest me. The other day he had a segment on Liquid Smoke. Generally speaking, NJ is not known for its bbq, unlike other parts of the country, so I'm not too familiar with Liquid Smoke. Does anyone use this? What do you do with it? Is more better or is it too much smoke flavor?

I have used it on occasion. More is definitely not better. It just takes a small amount (like about a teaspoon) to give a nice smoke flavor. I have used it when making a barbeque brisket or ribs.

I use it in my soups and chili. Gives a nice "round" smooth flavor. I've also used it in baked beans. Always have a little jar on hand!

I use it in marinades, especially for jerky. I keep some in a pressurised oil sprayer for a few things I cook on the grill. A little goes a long way for sure.

I have been using it for years-hickory is what most grocers carry, but I found more flavors by Colgin on Amazon. The Apple is delicious...the other flavors I can't vouch for because my kids used them up before I could even try them-even when my daughter was an avowed vegan! She made an awesome mushroom burger with it.

Poodlepet2

This is just like all the hoopla regarding bacon, meat, eggs; they are terrible for you. However, I choose to live the La Vida Loca & by golly that would be indulging in a little liquid smoke every now & then. However, not to the level I do when it is "wine-thirty"... Bottom line, I love liquid smoke the far & few times DH & I grill. You don't need much but to devote a show debating liquid smoke puzzles me.
