If you want to make an investment in baking sheets/pans, I strongly recommend USA Pans. They are, as their name says, made in the USA. To me, they are the All Clad of baking pieces. Buy them once any you're set for life. Might be a bit more costly than most brands, but they bake beautifully, do not warp or wobble or pop in the oven. Clean up is a breeze. I bought a 5 or 6 pc. set from Bed, Bath & Beyond which cost $49, but with the 20% off it was $40.

USA Pans has a web site you can check out and BB&B has many pieces on-line you can also view.

I need two deep baking sheets that do not warp when heated. I have two Ultrex ones that are still nonstick, but warp terribly when heated. They spilled bacon grease on the bottom of my oven today and made a mess. I'm through with them! Thanks in advance for your suggestions.

A couple of years ago I got fed up with constantly replacing cheap baking sheets. Was browsing in Home Goods and bought three Nordic Ware sheet pans and one from I think it might have been Cuisinart. They are a much heavier gauge and clean up easily--quite similar to what is used in restaurants. No more buckling or warping. They were so woth the extra money.

I only use aluminum baking sheets with the natural finish not non stick ones. Nordicware makes good ones but so do others. Get the ones with the rolled edge as they don't warp.

If you like aluminized steel, the Chicago Metallic ones are nice. I think they might also make nonstick ones - not sure. I don't really have any reason to use nonstick baking sheets, but YMMV.

BTW, if you decide to purchase better quality sheets, such as aluminized steel or just steel, etc, all you need to do to preclude sticking is to either use Silpat sheets or parchment paper between the baking sheet and the food.

That way your baking sheets stay pristine, no sticking, and they still work just as well.

My cookie sheets are over 10 years old they are from SAMs club and are professional full sheet style. They are perfect and I always use parchment paper when I bake.

my other fav is USA pans from Bed Bath and Beyond. I think these are 1/2 sheet size with ripples about 5 yrs old and still in perfect shape.

I have a great baking sheet which I purchased at Kitchen Collection ages ago, and I really don't remember the brand. It is the simple aluminum style that I noticed on most of the cooking shows.

Then I got a sil-pat that fit. The sil-pat is about 11 1/2 inches by 16 1/2 inches, and this makes the perfect set. Sometimes I use parchment instead of the silpat.

My scones, before & after baking:

Plus, you don't want anything that is going to put your pan too close to the walls of the oven. Then you'll gett stuff cooking hotter on the edges.

I have this problem with my half sheet pan that I use to make Ina Garten's brownies.

It seems fine for cakes as they don't cook as long or are not as dense as brownies but I find the brownies burn on the edges in that pan. I even wrap the pan with the wraps that you soak in water first and they still burn.

I started making that recipe in 2 pans.
