WEll I am really ticked now. I cannot find any of the three threads I post on regularly - was fine yesterday. I have to go to the search field and locate them - I find them but when I go out of the thread and look at all in that area, i.e. Among Friends, Kitchen, they are not there. Only the threads I post on. What on earth is going on? I found this the same way. Does this make any sense. Nope, I may have had a miserable night as far as sleep goes but am not completely insane at this point. LOL.

Betty, just keeping you company here in the Kitchen.

Sorry, I'm a day late.

Life hasn't slowed down here yet. Good friend's husband had a huge blood clot on his brain. Had unexpected surgery. So we have been visiting and keeping up with his progress and sharing the news with friends.

Here is a recipe for ribs. I have copied it as I'm always looking for a good rib recipe.

Memphis native and Test Kitchen veteran Pam Lolley was the victor in our Test Kitchen ribs smackdown. The best part about her smoky, sweet ribs recipe? You can cheat these babies in the oven. We love the oven method because wrapping the ribs in heavy duty foil will keep the ribs moist with no need to baste. And, oven temperature is easier to control than grill temperature so you can forget about monitoring your grill and turn your attention to which cold brew to sip or side dish to serve with your ribs.

The Oven Cheat Method
2 (2 1/2- to 3-lb.) slabs St. Louis-style pork ribs
Smoky Dry Rub
Rib Braising Liquid
Sweet-and-Spicy Barbecue Sauce

1) Rinse slabs, and pat dry. Remove thin membrane from back of each slab by slicing into it and pulling it off. (This will make ribs more tender.) Rub both sides of slabs with Smoky Dry Rub (about 3 to 4 Tbsp. per slab), pressing gently to adhere. Wrap each slab in plastic wrap, and chill 8 to 12 hours.

2) Preheat oven to 350°. Remove plastic wrap from slabs. Wrap each slab, meat side down, in heavy-duty aluminum foil.

3) Bake foil-wrapped slabs, meat sides down, on a large baking sheet at 350° for 1 hour. Unwrap slabs, and pour Rib Braising Liquid over them. Rewrap slabs in foil, and bake l more hour.

4) Remove slabs from oven, unwrap, and discard foil. Cool slabs 30 minutes.

5) Position oven rack 10 inches from heat. Increase oven temperature to broil. Brush Sweet-and-Spicy Barbecue Sauce on both sides of each slab.

6) Broil slabs, meat sides up, on baking sheet 10 inches from heat 5 to 6 minutes or until ribs are caramelized.

Smoky Dry Rub
Stir together 1/4 cup firmly packed dark brown sugar, 2 Tbsp. smoked paprika, 1 Tbsp. kosher salt, 2 tsp. garlic salt, 2 tsp. chili powder, 2 tsp. ground black pepper, 1 tsp. onion salt, 1 tsp. celery salt, 1 tsp. ground red pepper, and 1 tsp. ground cumin. Store in an airtight container at room temperature up to 1 month. Makes 1/2 cup

Rib Braising Liquid
Stir together 1 cup apple juice, 1 Tbsp. Smoky Dry Rub, 2 tsp. balsamic vinegar, and 1 minced garlic clove. Chill in an airtight container up to 1 week. Makes 1 cup

Sweet-and-Spicy Barbecue Sauce
Sauté 1/2 cup chopped sweet onion, 2 minced garlic cloves, and 1 seeded and minced jalapeño pepper in 1 Tbsp. hot olive oil in a large saucepan over medium-high heat 4 to 5 minutes or until tender. Stir in 1 (32-oz.) bottle ketchup (such as Heinz), 1 cup firmly packed dark brown sugar, 1 cup apple cider vinegar, 1/2 cup apple juice, 1/2 cup honey, 1 Tbsp. Worcestershire sauce, 1 tsp. kosher salt, 1 tsp. freshly ground black pepper, 1 tsp. celery seeds, and 1/2 tsp. dried crushed red pepper. Bring to a boil, stirring occasionally. Reduce heat to low; simmer, stirring occasionally, 30 minutes. Use immediately, or refrigerate in an airtight container up to 1 month. Makes 5 cups

Please don't feel you have to post about cooking. That isn't necessary. Just pop in and say hi.

With the "new" setup, can't tell if anyone is viewing us anymore. Was nice before to see the head count.

Fireworks were going off starting at 6:00 last night but they did stop at 11:00 in our neighborhood which I appreciated. Guess many people's dogs are having a very hard time with all this noise.

Just hope people remember what Fourth of July is REALLY all about. Bet if you asked most kids, they don't have a clue. Just think it is a time for fireworks.

Not sure what we are doing today. I think we might go to friend's house for hamburgers tonight. But that isn't a for sure thing. Will wait and see.

Have some rib eye steaks thawed so that might be dinner too. Just not planning ahead too far. Time will tell.

Just thought I'd drop in. Thirteen of us went to Cracker Barrell this morning for breakfast. I love eggs in a basket lol. We were all at the Tin Caps baseball game last night for the game and fireworks. My son In law rented a box so we had burgers and hot dogs and lots of goodies. We left during the fireworks and beat the crowd out. The neighborhood was full of smoke when we got here and the booms went on way after midnight. This morning there were colorful plastic bags In The yard. I think the guy across the street shot off some home made lanterns and they must have blown off the roof. He could have set us on fire. Dumb bunny!

Ooops, do not apologize for being a day late Soushi, I am 5 days late - have no clue where my brain is sometimes.

Yesterday was quiet - sort of. Really sick Friday night but did manage to go to the mobile home park my elderly friend lives in. The managers fix all the food for July 4th - otherwise their monthly chow times are potluck's. Hope no one takes this personal but sometimes those people can be horrible. An older lady was there with her daughter and she stood up to make an announcement. Obviously her pet had been poisoned and she was anxious to find out if anyone knew anything. The park manager absolutely and literally cursed at her, told her to shut up and sit down and a couple others - all older dignified Christians, started yelling at her. I almost got up and left - but not sure I will go back, friend or not. Nancy, another friend sitting across from me said it served her right as she was accusing someone in the park of poisoning her pet - well if she meant that I never heard that at all - just terrible. Felt so very sorry for her - she was in tears.

Hope all had a great Fourth - we also had a great Sunday at church this morning. Some regulars missing but I suspect since the Fourth was yesterday, some have gone away.

Have a good day everyone - am fixing some chicken breasts and a big sweet onion - of course - in the slow cooker. Have no clue what I will do for go withs.

Have no idea how this will post - for some reason it is all highlighted. LOL. Or most of it.

Evening all,

We had dinner at a friend's house last night. I invited ourselves, but we are such good friends, that it was okay. We don't grill but they do so I said I'll bring the hamburger if you grill them.

I brought deviled eggs, wonderful potato chips from Tifin, Ohio (DH's home town), wine, and strawberry shortcake. Oh, and DH brought the husband his favorite beer. She invited another friend too so it was a party for sure.

Fireworks around our neighborhood stopped at 12:00 but I expected them on again tonight. Dh can right to sleep with them going off, not me, takes awhile.

Yock, so glad to see you. Just come and chat, everyone. We don't have to talk about food but it some how creeps into the conversation. We have not been to see the Tin Caps. Seem like a great way to celebrate the holiday. Hamburgers, hot dogs, baseball, and fireworks just doesn't get more American than that!

I tossed in some cut small bell peppers with the chicken breasts and made gravy for it - gravy also put in the slow cooker toward the end. Fixed some fresh spinach - haven't had any in perhaps a year so it was overdue and also some corn. Pretty good if I must say so.

A busy day on tap - Davey's last day in the Summer Bridge Program for High School - sure hope it helps him.

Late morning a trip to the MD lab to pick up some kind of sleeping apparatus for one night to determine my oxygen level at night time. HOpe it is ok. Then a couple more errands. Sigh.

This morning I am sitting here with my slanket on - it is downright chilly. LOVE IT. Now this is a typical summer morning out here in Sou Cal, not that horrible heat we have been having constantly. The daytime temps are also a good 10 to 15 degrees lower than what we are suppose to have. While still hot during the day, I can handle it.

Just don't enjoy coming here anymore.

There, I've said it. Now I'll move on. DH off to the golf course today. I like to see him get out with the guys but wish he would take his portable air and usde it. Too hard for him to breathe and this is difficult on his heart.

Saw this today and I'm saving it.

Bayou Brownies

1 cup chopped pecans

1⁄2 cup butter, melted

3 large eggs

1 (18 1/4 ounce) package yellow cake mix

1 (8 ounce) package cream cheese

1 (16 ounce) package powdered sugar

Directions

Combine pecans, butter, 1 egg and cake mix.

Stir until well blended.

Press into the bottom of a lightly greased 13X9 inch pan.

Set aside.

Combine remaining 2 eggs, cream cheese and powdered sugar in a large bowl.

Beat at medium speed until smooth.

Pour cream cheese mixture over cake mix layer.

Bake at 325 for 40 minutes or until cheese mixture is set.

Let cool completely in pan on wire rack.

This place is just no fun - and I come here for fun!!!!!!! and staying in touch with some great cyber friends - and of course it was really nice when I got to meet a few in person. Yes indeed!!

Last night we had steak salad. I reheated the second wonderful rib eye steak, sliced it, and added to a bed of lettuce, sliced tomatoes, onion, ranch dressing. All very good.

We had a sea salt carmel for dessert! lol

Not much cooking there but we both enjoyed our salads.

Heavy rains this morning and I can hear the grass growing. Need to mow again but too wet right now. It is cooler now after the rain with a slight breeze ruffling the pines. There is a female cardinal at the feeder right now. It has made a huge difference with the new fancier seed. Oh, now I see a Blue Jay. He is very bird and tempermental too. Doesn't allow any birds around him when he is on the feeder.

Not sure what we will have for dinner. It hasn't been planned yet. Maybe a crockpot meal, we will see.

Hope all is well and enjoy this day.

What a cute little puddy tat Preds - love it.

Sounds like you and DH DID have a great salad Soushi. Nothing like using leftovers for sure.

Last night I fixed a chuck roast in the slow cooker and believe it or not, NO sweet onion. Halfway through fixed a pkg of pepper gravy and tossed it in - very very good. Also had fried cabbage - usually eat that as a stand alone meal - and some curly French Fries. All in all a good dinner. No potatoes left over, well of course not, but do have some meat and cabbage. Will; make a good lunch today.

Tonight am toying with having those pizza things - cannot recall exactly what they are called but you buy them frozen and the kids love them. Easy cooking - you nuke them. LOL. At any rate, have a large pkg in the freezer so will be easy fixings.

Very nice this morning, am sitting here with my slanket on - shortly it will get put down and the heat will be on. Soushi, I envy you having rain and having grass growing - even having grass. The mower called yesterday and I told him, nothing to mow, This is so unreal to me. He will be over, however to check the sprinkler heads. Water struggles to get out so suspect with all the dry dirt they are a tad clogged. Makes sense.

The spell check thingie got moved. It also would not correct for me. We just keep moving things around over and over again don't we? Am making an error to see if it fixes this one. Yes it did! Progress??

No cooking here last night. Did have boiled eggs for breakfast and ham/cheese sandwiches for lunch. We went out for Chinese at DH's request. It was just okay.

Bought some beautiful veggies at Aldi's last night. A huge head of califlower, broccoli, cucumber, tomatoes on the vine. Always like their vegetables.

Have some hamburger to use up so maybe a hamburger/cheese casserole tonight with some of those vegetables.

Don't think the font choices are working. How does the spell check work? Oh, found it.

Does anyone care about those juvenile hearts or how many posts you have made? Would rather go back to a viewing count.
