I got this recipe off a food blog but cannot remember which one. I usually serve as salad dressing over a salad of mixed greens, dried cranberries, avocado and topped with toasted almonds. Last night I had a little leftover and drizzled it over chicken and it was delicious. It is sweet so I bet it would be really good over salmon also.
3 T canola oil
1 T olive oil
2 T maple syrup
3 t apple cider vinegar
1-1/2 t Dijon mustard
1 clove garlic, minced
Salt and freshly ground pepper to taste
Whisk together all ingredients until well mixed. Best made a little ahead of time.

Oh boy, Thanks DiAnne! I have a big ole jug of real VT maple syrup still and since I don't make pancakes...I can use it here.
I have been trying to make all my own dressings/sauces lately and having a lot of fun w/ it.
I love the freshness of flavors and knowing what the ingredients are! Plus, I have cut way down on all the bottle clutter in my frig.

OMG! Thank you so much DiAnne. I really like this dressing. I just happened to have some Trader Joe's all natural pure maple syrup so decided to try your recipe. It is wonderful and so much better than bottled. I like that it does not make too much. I actually put a little bit on a slice of thin swiss cheese and honey ham. No more mayo on my snack! Looking forward to putting it on chicken and salmon. Thanks again for taking the time to post this recipe.

I agree, only fresh garlic in this house! I might even try adding a little more next time. Fresh, light and flavorful dressing.

I made this dressing last night and I will be making it a LOT more. Just the right balance of flavors. I am not a fan of honey mustard dressings, but I love this one with the mustard. Thanks so much for posting. Bought my avacodo today to make the salad you suggested. And I must get another bottle of real maple syrup to have on hand for this wonderful dressing.
