(recipe adapted from: Ina Garten)

I invited my sisters over last night for dinner. We grilled chicken breasts and made this delicious salad. I've never had anything like it, but it just 'spoke' to me. It was slightly sweet and savory and a great accompaniment to that grilled chicken. I made some modifications: It called for all arugula but I used baby spinach mixed in. Also, I didn't have any shallots so I used red onion.

1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice (2 lemons)
zest of one lemon
1/4 cup minced shallots (1 large) Or.. I used a red onion
1 tablespoon honey
1/2 cup light olive oil (I used a bit less)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups baby arugula, washed and spun dry
3 cups baby spinach, washed and spun dry
1/8 th seedless watermelon, rind removed, and cut in 1-inch cubes
12 ounces good feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned


Whisk together the orange juice, lemon juice, shallots or red onion, zest, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.

Place the arugula, spinach, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings enjoy!

Oops! Forgot to mention that I chilled the watermelon prior to adding it to this salad :-)

Hi Skylands...

I would have made the same two modifications that you did. I find watching Ina cook relaxing because she is so calm.
