Pecan Pie for Everyone! What Are Your Favorite Holiday Pies?

When I was 14, my family embarked on a cross country summer trip from southern California (home) all the way to Maine and back. We made many stops along the way, stayed at many bed and breakfasts, and that journey holds many special memories for me. When we arrived in Camden, Maine, we stayed at a place called the Whitehall Inn. And for three straight days, my mom had the same dessert at every meal...the inn's homemade Pecan Pie.  When we checked out on our last day, the pastry chef had tucked her recipe for the pecan pie inside our bill so my mom could make it at home. It's the only pecan pie I've eaten since, a wonderful classic!

Ingredients:

    • 4 egg
    • 1 cup sugar
    • 1 Tbsp flour
    • 1/2 tsp salt
    • 1 cup dark Karo syrup
    • 1/4 cup butter, melted
    • 2 tsp vanilla
    • 1 cup pecan halves

 
Directions:
 
1. Preheat the oven to 350°F. Spread the pecan halves on the bottom of an unbaked 9" pie shell.
 
2. Beat the eggs well in a medium-size bowl. Combine the sugar, flour, and salt in a separate bowl. Combine the corn syrup, melted butter, and vanilla in a third bowl and set the syrup mixture aside.
 
3. Pour the dry ingredients in with the eggs and mix well. Then, spoon the egg mixture over the pecans. Slowly and carefully pour the syrup mixture on top. Bake for about 50 minutes, or until golden brown and the center of pie is gently set.
