MDB - Thank you for starting a new thread. Nice to meet you, btw! I decided to take a quick Q break while at work and see where Webbie has been at it again and deleting a bunch of threads. What's up with that. Since I'm here anyway, I may as well post dinner. I think we're having spaghetti with cheese garlic sticks, side salad, and some kind of veggie (I'm just not sure which kind yet, lol). MDB...thanks for restarting the dinner thread yet again. I don't think we even got through a month since the last poof. LOL Nice to meet you. Scuba...I am checking in early today as well since I have to bring DD to an appt. this PM. Dinner tonight will be spaghetti with meat sauce and broiled pita bread. I hope Mitz, MM, Bama & Gahimom are feeling better. Have a great night all!!

Well, I'm trying to eat healthy (high cholesterol runs in my family)... but it's so hard sometimes! I was good last night, we had baked salmon, sauteed spinach and rice. Tonight I feel like eating a couple fried eggs and bacon! I'm relatively new here and have enjoyed reading posts!

Hey everyone ~ MDB, thanks for building a new dinner table for us. And *welcome* to Knit-Chick!! I wish you luck with eating healthier. We should do that too, but, you're right, when you say it's hard! Cat55, I'm pretty stuffed up today and my head feels like a big zit, but thanks for the well wishes. Why is it when I'm sick, which is very seldom, (thank God) I like spicy food Tonight we're having chili burgers with all the fixins', whether I can taste it or not! I also made those 3 ingredient lemon bars this morning, so that'll be dessert along with a piece of Mr Goodbar. See, KChick .. I need to eat healthier too. Have a good day Wacs ~*~ -- ♫♫ mm ♫♫

Cat55 & Scuba: LOL...it must be a spaghetti kinda of day...I am going that route as well!!! MM: bummer to hear you are stuffed up...I hope it goes away soon!! MDB: thanks for starting the new thread! I am not sure what I would do if it wasn't here when I logged in...I think I would be lost!...lol Tonight I am also haveing spaghetti, but I am going to throw in some homemade turkey meatballs and serve if with some garlic bread...thanks to Scuba I might add some cheese to my bread (that sounds good!!) Wow! we were poofed again? So soon? Thanks MDB for restarting the thread. I have seen you post on the breakfast thread, so I hope you join us again for dinner. MM ~ sorry you are stuffed up. That is so miserable. Hopefully it won't last too long. Feel better. Mitz ~ I hope you have a good 3 days off. Those off days always pass too fast!. For some reason, I am drawing a blank on what everyone has written. I know Cassie posted, and I think Scuba did too. Anyway, hello to alll. Good evening, all. ~ Thanks to MDB for starting us up again! MM, I am glad the *cat people got on the stick before you had to take one to them! I'm even happier to know that you stayed out of the left over wieners Hi Knit Chick, and welcome to the table. Gahimom, has the pain subsided? Sure hope you've had some relief. Yes! The 3 days off go far too quickly. I cook, clean, do laundry and then go back to work Cat55, any news on DD's transition, after high school? I do hope that goes smoothly. I am buying some pita bread soon. You have gotten to me with the grilled pita bread! ((rubi and sil)) Hey bama, boby, bopper, ba, scuba diver, uqt, cassies, cheftess, ruafoodie and any others that I may have missed. The table has grown so much. I have a whole chicken in the oven, roasting right now. We'll have mashed potatoes, green beans and drop bisquits (with butter and blueberry jam ~ thanks MM ). I also baked some double chocolate brownies today. I did taste a corner piece , and they are delish! I'll have iced water to drink. Have a good night, everyone.

Posted dinner yesterday AM, only to have it zapped by Webbie - that was linguine with red cabbage, onions, garlic and feta cheese. Could have posted that on the "five ingredients or fewer" thread. Tonight's dinner is a bit more elegant, since I'll only be cooking for one: pan-seared duck breast in a sour cherry-port wine reduction with wild rice on the side, and tossed salad with a yogurt-based blue cheese dressing. Hi, Everyone. Boby...I love duckling!!! Isn't that a lot of work for one person??? I'm available if you want to expand your guest list. LOL Knit-Chick...welcome. It is hard to eat healthy especially when all the bad stuff tastes so good!!! MM...ROFLMAO " my head feels like a big zit". Just don't try to pop it!!! Sorry, but I couldn't resist. I hate to say it, but Maxie's prize is not very exciting. You would think they could splurge a little more. . Mitz...I really enjoy the pita bread. It is lighter than garlic bread so I feel I am being good when I eat it. Thanks for asking about DD. We are waiting to hear if she will be accepted in a new program that teaches independent living skills in a college atmosphere. Unfortunately with all the budget cuts not sure how many openings they will have. Your roast chicken sounds delicious!!! Cat55: No work at all, actually. Its just a breast, not the whole duckling. I pan sear the breast and finish it in the oven. Meantime, I reduce the cherry/port gravy, and do the rice in my Zojirushi. Whole thing doesn't take an hour. The salad is right from the bag, and the dressing is right from the bottle. You can probably be in Kingston in 3 to 3-1/2 hours from Northern Vermont. We're like Motel 6: "We'll leave a light on for you." Knit Chick: Thanks. It was one of those dishes that exceeds expectations, and the red cabbage makes it really healthy for you. And it only takes about 40 minutes with prep time. 2 medium-sized red onions, thinly sliced about 2 lbs red cabbage, thinly shredded 1 lb linguine 1/2 cup extra virgin olive oil 6 oz crumbled feta cheese 4 cloves garlic, minced 1)Heat the oil in a large saute pan over medium heat. Saute the onions until translucent, about 10 minutes. Add the garlic and continue to saute about three minutes. Add the cabbage, cover, and let it sweat for 20 minutes, stirring occasionally. 2)Meantime, cook the pasta according to package directions. Drain the pasta, toss with the cabbage mixture, season with salt and pepper (probably won't need much if any salt; the feta is pretty salty) and sprinkle with the feta.
