Tonight's dinner:
SLOPPY JOES (old school recipe)
1 pound ground beef
1 onion, chopped
1 (6 ounce) can tomato paste
1 cup water
¼ cup Heinz ketchup
1 Tbls. Worcestershire sauce
3 Tbls. yellow mustard
3 cloves garlic, minced (or 1 Tbls. minced from jar or tube or garlic powder)
1 teaspoon distilled white vinegar
1/2 tablespoon chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper
*4 Tbls. brown sugar (this is the ingredient that balances all the others, so add to taste) NOTE: Add brown sugar 10 minutes before serving. (If you add it too early it may burn). The brown sugar makes this dish!
In a large skillet on medium-high heat, sauté the ground beef for 5 minutes. Add the onion, and 2 cloves of minced garlic; sauté for 5 more minutes, or until onion is tender.
Drain the fat.
Mix in tomato paste and water, stirring until paste is dissolved. Stir in ketchup, garlic, chili powder, vinegar, oregano, mustard, salt and pepper.
Add brown sugar 10 minutes before serving. (If you add it too early it may burn). 8 hamburger buns, split & warmed.
I serve them with cole slaw & chips.
I put extra in zip lock bags & freeze flat for a quick meal another day. There are only 2 of us, so I can serve it and freeze 3 bags with enough for 2 in each bag.

Tonight we're having homemade beef minestrone soup with sourdough bread and waldorf salad leftover from yesterday (cut up apples, celery, walnuts, craisins and vanilla yogurt...I'll add some fresh banana slices to it today too).

Homemade beef vegetable soup! It is wonderful! I made a huge batch and froze a lot of containers of it. We're having it with stone ground meal cornbread.

@Havarti Great minds think alike! I ended up making homemade sloppy joes too, with fresh bone bread from a local bakery and veggies.
