Two interesting-looking ways to use those bell peppers

These just came in the mail from my friendly supermarket, and must admit they do looking easy and interesting.

 

BAKED PEPPER RINGS

 

Coat 1/2-inch-thick  rings of bell pepper with flour.

 

Dunk each in beaten egg, then coat with dried breadcrumbs, seasoned to taste.

 

Spray rings generously with cooking spray.

 

Bake at 450 degrees for 18-20 minutes, turning once.

 

 

FRIED EGG IN PEPPER RINGS

 

Crack an egg into a pepper ring in a  pan and fry until egg

reaches desired doneness.  (Photo shows an egg with yolk still intact inside the pepper ring, but I'd be tempted to beat the egg first and get it more well-done.)

 

Add salt & pepper and serve.

 

Top with mild or hot salsa.

If you have excess bell peppers, you can dice them and freeze.  I like to freeze them in one cup sizes in individual freezer bags.

novamc, making a fried egg in one is how I always use up any leftover peppers I may have . . . they are absolutely delicious that way!

I got that same mailing today -- and my reaction was the same.  I plan to try both recipes while the farm stands are piled with peppers.

Sounds like the same as egg in a hole but so much healthier than bread, thanks I put red and green peppers on my grocery list just today!!
