Stuffed Pasta Shells

3/4 pound ground beef

1 box jumbo pasta shells

4 cups (32 ounces) ricotta cheese

8 ounces mozzarella shells

1/2 cup Parmesan cheese...grated ...plus more for the top

2 eggs

1 tablespoon parsley...chopped

1//2 teaspoon salt

pepper to taste

1/8 teaspoon nutmeg

1 jar spaghetti sauce

Cook shells as directed on box. Drain and rinse shells with cold water. Brown beef..drain and set aside. Mix together cheeses, eggs, salt, pepper and nutmeg. Fill the shells with the cheese mixture. Mix the beef with spaghetti sauce. Cover the bottom of a baking pan with SOME of the sauce. Arrange stuffed shells in a single layer in the pan. Pour remaining sauce over shells. Bake at 350* for 30 minutes or til hot. Sprinkle with Parmesan cheese over top.
