These are nice for a change of pace. I buy a can of Chipolte peppers - use one and freeze the rest individually to use in other recipes.

1/2 cup sour cream
1 chipotle pepper (from can) chipped fine
2 limes (divided)
1 T peanut oil
1/2 pound raw shrimp, cut into smallish pieces
1/2 T Old Bay seasoning
6 corn tortillas, warmed well or fried in skillet
1/2 cup shredded purple cabbage

In small bowl mix together sour cream, chipotle and juice from half a lime.

Heat skillet over high heat and then add the oil. Add shrimp and stir-fry quickly. Add Old Bay and juice from other half of the lime.

Put some Chipotle cream on tortilla, add a little cabbage, add shrimp and squeeze a little more fresh lime juice over the top.

Makes 6 tacos

You can add anything you else you want to the tacos - tom, cheese, olives, green onion, etc.
