I am sure this is not new to many of you. My favorite way to fix asparagus - made it for dinner last night.
One bunch of thick asparagus
Olive oil
Kosher salt and freshly ground black pepper
Parmesan cheese
Pre-heat oven 400
Break off the tough part of the stalks of asparagus. Place asparagus on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to mix. Spread out on baking sheet and place in oven. Roast until fork tender - start checking at about 20 minutes. Grate Parmesan cheese over the asparagus when hot from oven.
Do not try this with pencil thin asparagus as it almost dissolves. The thicker the better.
