Please read entire recipe before making this delicious dessert. There are different variations of this recipe. I find that the Jello Pumpkin Spice Pudding tastes great with pecans. I found this Jello at Walmart. Enjoy!!
1-1/2 cups of all purpose flour
1/4 cup chopped pecans
3/4 cup softened butter
1 (8 oz) package of cream cheese softened
1 teaspoon of vanilla extract
1 cup of confectioner's sugar
16 ounces of cool whip
2- packages of Jello Pumpkin Spice pudding 3.4oz box
3 cups of cold milk
1/8 cup of chopped pecans
preheat oven to 350 degrees
Combine the flour, pecans and butter and mix well. Press the dough into the bottom of a 9 X 13 pan. Bake 20 to 30 minutes or until crust is lightly browned.
Mix together the cream cheese, vanilla, confectioner's sugar and 1 cup of the whipped topping. Beat well. Then spread over cooled crust. Refrigerate one hour.
Mix the both boxes of pudding with milk until thick. Spread pudding over the cream cheese layer. Then top with remaining whipped topping. And sprinkle with the 1/8 cup of pecans. then refrigerate to let set and then serve when chilled.
