Mexican Chicken & Rice Dinner

Prep time: 10 min. Cooking Time: 15 min. Makes: 4 servings

4 small boneless skinless chicken breast halves (1 1/4 #)

1 cup Thick 'N Chunky Salsa

1 pkg. Taco seasoning mix (2.5 oz)

2 cups each water and Minute White Rice, Uncooked

1 can (8 oz) whole kernel corn, drained or I used 1 cup of frozen corn

1 cup shredded cheddar cheese

sliced black olives (optional)

Bring chicken, salsa, taco seasoning mix and water to boil in a large skillet; cover. Simmer 10 minutes. Return to boil. Stir in Minute Rice. Sprinkle with cheese (and optional olives- I used small can sliced) cover. Cook on low heat for 5 minutes.

It makes the chicken so tender and juicy. I usually serve with green salad. My DH loves this. I do variations - so for instance - blended cheeses, or add a couple of dashes of hot sauce, even different levels of heat on the salsa. What ever you want.
