Making fries from butternut squash? Should I blanch them first?

My WW recipes suggested making oven fries from butternut squash.

I have very little experience with this vegetable and it seems very, very hard.

Would it be advisable to blanch the fries before roasting them?

I don't think so.  I roast cubed butternut squash and it does not take that long.  You are just cutting into a different shape to roast.

love butternut squash. I also roast it without blanching so I do not think you would need to. It seems to caramelize like sweet potatoes. It is so good.

I don't think they need to be blanched either.  I always cubed and roasted without blanching.  Very good.  I do want to try it as fries once I am done with my potatoes.

That's one less thing I need to do this afternoon - not a lot of time.

 

If I can bother you one more time - can I freeze the extra ones before cooking them, perhaps individually on a cookie sheet then into bags?

Yes, do the cookie sheet freeze first.

I have never frozen it but I can't see why not.  It is worth a try!

@house_cat  No blanching necessary as the squash cooks quickly.  I often roast cubes of butternut squash in olive oil and salt, sometimes dribble agave or honey over them, and sprinkle with cayene or some such spice.

I just wanted to chime in that I have made these.  I didn't blanche at all.  I loved them, but just so you know they don't turn out very crunchy.  They are a little soggy, but still really good and a good replacement.

You're right, they weren't crunchy, but they were delicious and '0' ww points! I have a bagful in the freezer for at least two more nights!
