If you enjoy lamb, now is the best time of year for buying tender lamb. This recipe calls for lamb chops, which are always expensive. I always bought lamb shoulder or arm steaks, which were also good but less expensive. The meat is tenderized by the teriyaki sauce and is very flavorful.

Lamb Chop Teriyaki

6 shoulder chops, 3/4" thick
3 Tbsp. soy sauce
1/2 tsp. ground ginger
1/2-1 tsp. garlic salt
1/8 tsp. white pepper (I use black)
2 tsp. sugar
1/2 cup orange juice
2 oranges, cut into wedges (for garnish)
Hot cooked white rice

Arrange chops in single layer in a shallow baking dish. Combine remaining ingredients and pour over the chops. Marinate in refrigerator for 1-2 hours. Bake covered at 350 degrees for 1 hour or until fork tender. Add orange wedges the last 10 minutes and cover. To serve: lift chops onto hot platter. Remove excess fat from drippings before making gravy. For gravy: use 1 Tbsp. cornstarch dissolved in water per cup of drippings.
Serves 4-6.
Note: Good served with fruit salad of oranges, prunes and kiwi fruit and with French sliced frozen green beans.
