LBM

Three Layer Chocolate Surprise

1 cup flour

1 stick butter

1/2 cups chopped nuts

1 cup powdered sugar

1 (8 ounce) package cream cheese

1 large container Cool Whip

3 cups milk

2 LARGE boxes Jello instant chocolate pudding

1 cup toasted coconut

Combine flour, butter and chopped nuts. Press into a 9 x 13 inch pan. Bake at 375* for 15 minutes. Cool. Mix powdered sugar, cream cheese and 1 CUP of the Cool Whip together. Pour over COOLED first layer. For the third layer, mix the milk and Jello pudding together. Mix well. Pour over the second layer. Put in refrigerator til set. Top with remaining Cool Whip. Sprinkle the toasted coconut over the top.

LBM, TY Night,its going to take forever to do that...I was hoping to get some help{#emotions_dlg.biggrin} ty for your help!!

Easy Rice Pilaf

2 1/2 cups HOT water

1/4 cup butter

1/2 cup onion...minced

1 cup celery...chopped

1 cup UNCOOKED white rice

1 envelope Lipton brand DRY CHICKEN NOODLE soup mix

1/4 teaspoon sage

pepper to taste

1/4 teaspoon thyme

In a skillet, melt the butter. Saute onion and celery and rice until golden brown. RICE MUST BE GOLDEN BROWN! Stir in remaining dry ingredients. Quickly add hot water and cover skillet. Simmer for 15 minutes or until the water is absorbed. Remove from heat and let stand for 10 minutes. This will make about 4-6 servings.

Breakfast Quiche by LilBitMissty

1 pie crust (9 inch pan)

3/4 pound bacon.... fried crisp

1 cup sharp cheddar cheese

1 cup Monterey Jack cheese

4 eggs

1 1/3 cups sour cream

On lightly floured board, roll pastry to fit pie pan. Bake on low rack of oven at 425 * for 5 minutes. Gently press down any bubbles in crust. Cool before filling. Cut bacon in small pieces and add cheese. Sprinkle over crust.

In medium bowl, beat eggs with sour cream until smooth. Pour over crust. Bake on low rack of oven at 425 * for 20 to 25 minutes. Let stand 5 minutes before serving.

Oh Brit, Cookie and of course LBM...thank you so much for all your recipes and sharing!

Cookie, you had some I have missed before. Esp. THANK YOU for the chix & dumplings!

The only recipe I tried so far was breaking up packaged Grand Rolls for the dumplings. I didn't care for it at all! I was so looking for a homemade dumpling recipe! Can't wait to try it.

Here's another:

Bailey's Cake by LilBitMissty

1 box yellow cake mix

1 small box vanilla INSTANT pudding

4 eggs

3/4 cup oil OR applesauce

1/3 cup Bailey's Irish Cream

1/3 cup water

1.2 cup butter, melted

3/4 cup walnuts, chopped

1/2 cup packed brown sugar

Mix cake mix, pudding mix, eggs, oil OR applesauce, Bailey's Irish Cream and water.

In a bunt pan, pour butter all around the sides of the pan. Add brown sugar and nuts, Pour cake mix mixture over the top.

Bake at 350* 35-40 minutes. Make sure it is COMPLETELY done. Remove from pan immediately. Cool. Sprinkle powdered sugar over the top.

Veal OR Beef Parmigiano by LilBitMissty

3 Tablespoons butter

1/2 cup crushed cornflakes or regular bread crumbs

1/4 cup Parmesan cheese, grated

salt & pepper to taste

1 pound veal cutlets OR round steak about 1/4 inch thick

1 slightly beaten egg

1 (8 ounce) can tomato sauce

1/2 teaspoon oregano

1/2 teaspoon sugar

dash onion salt

Mozzarella cheese

Melt butter in a 10x6 inch pan. Combine cornflakes crumbs, Parmesan cheese, salt and pepper. Cut veal or beef into serving pieces. Dip in egg then in crumb mixture. Place in baking pan. Bake at 400* for 20 minutes. Turn meat over and bake 15 - 20 minutes more or until tender.

MEANWHILE MAKE SAUCE: Combine tomato sauce, oregano, sugar and onion salt. Heat to boiling. Stir frequently. Pour over meat. Top with Mozzarella cheese. Return to oven to melt cheese.

*can use cube steaks, also.

**If you like, you could add some sautéed onions and diced green peppers to the sauce**

Slow Cooker Chicken Salsa Meal by LilBitMissty

4 FROZEN boneless chicken breasts

1 can corn...drained

1 can black beans...drained

1 small jar salsa

lettuce

TOPPINGS:

grated cheese

sour cream

tomatoes...diced

green onions...chopped

Put chicken, corn, black beans and salsa in slow cooker. Cook on low for about 8 hours Take chicken out of slow cooker. Shred chicken then put back into slow cooker and mix well. Server over top of lettuce leaves, Top with your choice of toppings.

Peach Crisp by LilBitMissty corrected copy

5-6 cups fresh or frozen peaches..sliced....thaw if using frozen

2 tablespoons sugar

1/2-1 cup rolled oats

1/2 cup brown sugar

1/4 cup flour

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

1/4 cup butter

lemon juice

Place peaches in a 2-quart square baking dish. Sprinkle with lemon juice to prevent browning. Stir in sugar.

For topping:

In a medium bowl, combine oats, brown sugar, flour, nutmeg and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping over peaches. Bake at 375* for 30-35 minutes (40 minutes if using frozen peaches) or until fruit is tender and topping is golden.

Slow Cooker Sweet And Salty Pretzel Snack Mix by LilBitMissty

1 (16 ounce) bag pretzel sticks

4 cups pecan halves

4 cups corn Chex cereal

4 cups salted cashew halves

1 cup butter

1 cup powdered sugar

1/2 cup brown sugar

2 teaspoons cinnamon

Combine pretzels, cereal and cashews. Put in slow cooker.

Melt butter in a saucepan.

Stir in both kinds of sugar and cinnamon. Stir until blended.

Drizzle over mixture in slow cooker.

Cook uncovered for 2-3 hours on high until mixture is "glazed. "

Cool on paper towels. Store covered in airtight container.

Here is the recipe I use for Swiss Steak. Looking for my Salisbury steak recipe.

Swiss Steak by LilBitMissty

1 1/2- lbs beef boneless round, tip or chuck steak, about 3/4 inch thick

3 Tablespoons all-purpose flour

1 teaspoon ground mustard

1/2 teaspoon salt

2 Tablespoons vegetable oil

1 can (14.5 oz) whole tomatoes, undrained

2 cloves garlic, finely chopped

1 cup water

1 large onion, sliced

1 large bell pepper, sliced


Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.

In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.

Add tomatoes and garlic to skillet, breaking up tomatoes with a fork. Heat to boiling; reduce heat. Cover and simmer about 1 hour 15 minutes, spooning sauce occasionally over beef, until beef is tender.

Add water, onion and bell pepper to skillet. Heat to boiling; reduce heat. Cover and simmer 5 to 8 minutes or until vegetables are tender.

Red, White, and Blue Jell-O by LilBitMissty

2- 3 oz packages of blue Jell-O
4 cups boiling water, divided
4 1/2 cups cold water, divided
1 cup fresh blueberries
1 envelope unflavored gelatin
1 cup milk
2/3 cup sugar
2 cups (16oz) sour cream
1 teaspoon vanilla
2- 3oz packages of strawberry Jell-O
1 cup fresh strawberries, hulled and sliced
cool whip, room temperature

In a trifle bowl, dissolve strawberry Jell-O in 2 cups boiling water. Stir in 2 cups cold water. Add strawberries, save a few to garnish the top with later. Refrigerate until firm. {2-3 hours} *Do not start the next layer if the layer below is not firm.*

In a sauce pan, sprinkle unflavored gelatin over 1/2 cup cold water; let stand for 1 minute. Add the milk and sugar; cook and stir over medium heat until gelatin and sugar are dissolved. Cool to room temperature. Whisk in sour cream and vanilla. Spoon over strawberry Jell-O and refrigerate until firm. {about 1-2 hours}

In a medium bowl, dissolve blue Jell-O in 2 cups of boiling water; stir in 2 cups of cold water. Add blueberries, reserving a few for the top. Spoon over white layer. Chill until set. {3-4 hours} Garnish with cool whip and the reserved berries.

Rice Pudding by LilBitMissty

2 cups liquid (use milk or half and half - or a combination of both)

1 egg, plus 2 egg yolks, beaten

1 cup cooked rice

1/2 cup sugar

1/2 cup raisins

1 teaspoon vanilla

· Heat oven to 350*.

· In a bowl, combine liquid, eggs, rice, sugar, raisins and vanilla.

· Pour into lightly buttered 1 1/2 quart casserole dish.

· Sprinkle nutmeg on the top.

· Place casserole in a large baking pan. Fill the pan with boiling water.

· Put enough boiling water in the pan to reach halfway up the side of the casserole dish.

· Bake 60-70 minutes or until a knife inserted an inch from the edge comes out clean.

· Serve warm or cold with half and half. This serves 4-6.
