@maggiepooh Here's the recipe we have been using for 40 yrs. from the Betty Crocker cookbook.

 

Pumpkin Nut Bread
 
2/3 c melted butter
2 2/3 c sugar
4 eggs
1 can pumpkin (1 lb)
2/3 c water
3 1/3 c all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1 c chopped walnuts
 
Heat Oven to 350° Bake 70 mins or until toothpick comes out clean
Grease 2 -  9 x 5 x 3 loaf pans or 7 - 5 x 3 x 2 tinfoil pans
In large bowl mix oil & sugar, stir in eggs, pumpkin & water
Blend in flour, soda, salt, baking powder, cinnamon & cloves
Stir in nuts
 
The original recipe calls for 2/3 cup shortening but I use 2/3 Kerrygold butter
