Re: How do you like YOUR cranberries?

I make cranberry mousse. It can be a side dish or a dessert. Very easy and yummy and pretty too.

They have to be jelled.

Re: How do you like YOUR cranberries?

I make a fresh cranberry relish with crystalized ginger and a tangerine. It's all chopped in the food processor and then sits overnight

Re: How do you like YOUR cranberries?

Interesting the ways people fix their cranberries!  @lolakimono - that Cranberry Grape Compote looks like a nice combination of flavors!  And @CalminHeart - the cranbery ice sounds intriguing - could be a pie alternative for dessert!  Must be many steps involved if it takes 3 days.  The funny thing about our cranberry loaf is that we even have a special glass dish just the size of the can that they are served in - got it when my mom moved a few years ago! Re: How do you like YOUR cranberries?

This has been the standard on our table for about a decade.  Leftovers are excellent with a pork tenderloin.

Cranberry Sauce with Dried Cherries and Cloves

2 ½ cups cherry cider or black cherry cider or cranberry juice cocktail
1 8-ounce package dried tart cherries (about 2 cups)
1 cup sugar
1 12-ounce package cranberries
1/4 teaspoon (generous) ground cloves

Bring cider to simmer in heavy, large saucepan. Remove from heat.

Add cherries and let stand 8 minutes. Mix in sugar, then cranberries and cloves. Cook over medium-high heat until cranberries burst, stirring occasionally, about 9 minutes. Refrigerate until cold, about 4 hours (sauce will thicken as it cools).

(Can be prepared 4 days ahead. Cover and keep refrigerated.)

Strive for respect instead of attention. It lasts longer.

Re: How do you like YOUR cranberries?

In addition to what has already been mentioned, if you like smoothies add a few whole cranberries to it.  It gives the drink a bit of a twist and is very good.

@wagirl

Would you share your recipe for Cranberry Mousse?

Somebody mentioned on another thread that they have never seen a Cranberry Pie.  Anybody here ever made one?
