Hong Kong Chicken
1 Tablespoon oil
1 whole chicken...cut up (or thighs of equivalent weight)
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1 Tablespoon ketchup
1/4 cup apple juice
1 clove garlic...minced
1 green onion...sliced
1 1/2 Tablespoons cornstarch
2 Tablespoons water
2 1/2 Tablespoons toasted sesame seeds
Heat oil in skillet. Brown chicken pieces on both sides. Make a sauce using soy sauce, sugar, 1/3 cup water, ketsup, apple juice, garlic and green onion together. Put chicken in sauce coating both sides and simmer 35-40 minutes, Remove chicken. Mix together the cornstarch and 2 Tablespoons water, add to sauce simmer til it it thickens. Return chicken to the sauce, Sprinkle toasted sesame seeds over the top and serve.

It's always a pleasure when you come back 'home'. I miss your postings and wish you wouldn't make a stranger of yourself. How have you been, Lilbit?
Question for you: Is everything prepared stovetop in the skillet, i.e., is the chicken simmered in the skillet? I have some leftover steamed veggies I got at my favorite Chinese restaurant that I think will go well with this recipe.

Hi LBM. Hope you are doing well. Have not seen you here in a while. This sounds like the bourbon chicken like they sell at the Mall that I make less the sesame seeds & green onions. It's really good. DH likes it with rice.
