Creamy English Cucumber Salad

I'm quite fond of cucumbers and like them in salads and as a sandwich.  This looks really good!

 


CUCUMBER SALAD

1 1/2 lbs cucumbers

1/2 medium purple or yellow onion

1 Tbsp fresh or frozen dill

1/2 cup sour cream

2 Tbsp mayonaise

 1/2 Tbsp fresh lemon juice

 1 garlic clove

 1/2 tsp sea salt and pinch of black pepper

 

 

Mix, Chill

I will have to keep this recipe in mind. Sounds good.

 

I often buy a package of 6 cucumbers. I will use one in a salad. And the next  time I make a salad, the other five cucumbers were going south. So I stopped buying. The only time cucumbers were sold as a single seem to be in the summertime.

 

Now I will try the Cucumber Salad with the 5 left over cucumbers.

@ECBG     My parents would LOVE this one!  We always end up with a lot of cucumbers in the garden.  I'll certainly be making this one too.  Thank you for sharing 😊❤️

Thus sounds exactly like the Cucumber salad my grandmother used to make! I loved it! 😋The last time I remember having it was in 1969 at my grandparent's 50th wedding anniversary party. My grandmom made it. My grandparents had a beautiful yard, full of flowers.💐 My grandmother was quite the gardener. Their party was given in the backyard. I was 15. Now, as an adult, I've often thought about it. But at 15, I had no interest in recipes. I have often wished i had her recipe. I will definitely make this! Thank you for the memory and the recipe too!

Ladies, English cucumbers don't have to be peeled; the ones with wax do!Smiley Happy

I think the Persian cucumbers taste the best.  Hardly any seeds, they don't have to be peeled and aren't as large as an English cucumber so they don't go bad as quick.
