It's hard because there are different kinds of sponge cakes too. Did you try lightening the  pastry cream by folding in whipped cream? I'd put the lemon zest in the pastry cream mixture.

The cake looks delicious from the pictures.  Epicurious has a recipe for a similar cake, but it looks complicated, and I have no idea what vanilla essence is.  Anyway, check out the recipe.

The next time that I hear salt and ice together, it better be in a margarita!

That is one I tried out a couple of years ago. It was ok but not great. The older i get the more I think that food tastes best when someone else makes it. Even if I do the exact recipe I will like the other best. Thanks @SXMGirl!

I don't know the cake, but am intrigued now.  I found this recipe for Lemon Scented Meringue Cake, and it looks very, very similar to the one in the YouTube video. 

Strive for respect instead of attention. It lasts longer.

The video Morgan found, showed them adding cream to the pastry cream so that is what I will be doing @jaxs mom. I didn't do that the first time.
