CAFE ALMOND CAKE

[ Edited ]

Made a trial run with this cake last night.  If you like almonds you will love this.  Served with macerated blackberries and whipped cream.  It is made in the food processor.

1 cup flour
1-1/2 t baking powder
¼ t Kosher salt
1-1/4 cups sugar
7 ounces almond paste
1-1/4 cup unsalted butter, room temp
6 large eggs, room temp

Powdered sugar for dusting

Pre-heat oven to 325.  Butter and four 9 inch spring form pan.

Sift flour, baking powder and salt together.  Set aside.

In food processor combine sugar and almond paste until well mixed.  Add the butter and process until light and fluffy.  With processor running add eggs one at a time.  Add flour mixture and process just until thoroughly blended.

Pour batter in pan.  Bang on counter to get air bubbles out.  Bake cake until the center feels springy when gently pressed (1 to 1-1/4 hours).  Let cool for 20 minutes.  Remove from pan onto rack and cool completely.  Transfer to a cake plate and dust top with powdered sugar.
