Bean And Tamale Soup

1 pound pinto beans

10 cups water

2 (8 ounce) cans tomato sauce

1/2 pound bacon...diced

3/4 cup onion...small diced

1 large carrot

1 stalk celery

1-2 cloves garlic...minced

1 1/2 teaspoons salt

2 teaspoons taco seasoning

Dumplings:

1/2 pound ground beef

1/8 cup onion...diced small

1 teaspoon taco seasoning

1 1/2 cups cornmeal

3/4 cup flour

2 teaspoons baking powder

salt and pepper to taste

Soak beans OVERNIGHT. Drain. Add 10 cups water, bacon, onion, garlic, celery, carrot, taco seasoning, salt and sugar. Simmer for 3 hours. Reserve and cool 1 cup of broth.

To Make Dumplings:

Brown beef with onions and seasonings. Cool. Combine cornmeal, flour, baking powder, salt and pepper with the cooled broth. Make 16 balls. Press balls flat and fill with 1 teaspoon of meat. Roll dough around the meat and pinch the edges to make tamale dumplings. Place the dumplings in the simmering soup. Cover and cook for 30 minutes.
