I had this at my cousins house. They had a Caribbean themed dinner party with barbecued pork roast, black beans, etc. They served this as one of the side dishes. I have been making it ever since.

BAKED BANANAS

4 ripe bananas, peeled, cut crosswise in half and halved lengthwise
4 T unsalted butter
2 T dry sherry
1 T fresh lime juice
1/3 cup loosely packed brown sugar
1 t ground cinnamon

Preheat oven to 375. Arrange bananas in a single layer in 11 x 9 inch glass baking dish.

Melt butter in a small saucepan over medium heat, stir in sherry and lime juice. Heat thoroughly then pour over the bananas. Sprinkle with brown sugar and cinnamon. Bake until lightly browned and bubbly, 12-15 minutes.
