BACON WRAPPED STUFFED SHRIMP

INGREDIENTS:

12 Large shrimp

4 to 6 ounces of Cream Cheese

1/4 cup Chopped Pickled Jalapenos, or to taste

Cayenne Pepper to taste (remember it will get much hotter as it cooks

6 strips of Bacon

Ranch dressing for dipping sauce

DIRECTIONS:

1. Preheat oven to 350 degrees. De-shell shrimp completely. Cut shrimp along the vein (outside) as deep as possible without cutting all the way through.

2. In a bowl, mix the cream cheese, chopped pickled Jalapenos, and cayenne pepper.

3. Cut the strips of Bacon in half. Pre-cook bacon for about 1 minute in the Microwave or cook in a frying pan on the stove. You want the Bacon to still be rubber, but starts to cook a little.

4. Using a spoon, spread the mixture from the bowl into the cut vein of the shrimp. Wrap bacon around the shrimp and secure with a toothpick. Sprinkle both sides with cayenne pepper to taste.

5. Place Shrimp on a baking tray covered with aluminum foil and sprayed with Pam cooking spray. Bake in a 350 degree oven 10 minutes, turn and bake the other side for 10 minutes. Keep a close eye on the shrimp. TheBacon will become crispy and the shrimp will change color to the normal pink color when it is done.

6. You can grill the shrimp by setting the grill for two zone cooking and heat the direct side to medium hot. Put the Bacon Wrapped Shrimp on the indirect side of grill and grill with lid on about 2 to 3 minutes per side, or until shrimp is pink.

I like to serve with ranch dressing for a dipping sauce.
