Apple Streusel Cheesecake

Crust:

1 1/2 cups graham cracker crumbs

3 tablespoons brown sugar

1/2 teaspoon cinnamon

1/4 cup melted butter

Streusel:

1/4 cup brown sugar

1 cup graham cracker crumbs

1/2 cup toasted walnuts

1/4 cup melted butter

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

2 medium Granny Smith apples

2 tablespoons butter

Cheesecake:

5 (8 ounce) pkgs. cream cheese...softened

1 3/4 cups sugar

3 tablespoons flour

1 tablespoon vanilla

6 eggs...at room temp.

1/4 cup heavy cream

Using CRUST ingredients: Mix graham cracker crumbs, sugar and cinnamon. Add melted butter and mix. Press crust in a 9 inch buttered springform pan. Cover bottom and halfway up sides. Refrigerate.

Using STREUSEL ingredients: To toast walnuts..spread on a cookie sheet and bake at 350* til toasted (about 10 minutes). Chop apples in small pieces about 1/2 inch in size. Saute apples in 2 tablespoons of butter til slightly soft. Set aside to cool. Mix graham cracker crumbs, chopped toasted walnuts, cinnamon, nutmeg and brown sugar. Divide this mixture in half. Add apples to ONE HALF and set aside. Save the second half for the top of the cheesecake.

Using Cheesecake ingredients: combine cream cheese, sugar, flour and vanilla. Blend well. Beat in eggs one at a time. Stir in cream. Pour half of cheesecake mixture into pan with crust. Sprinkle streusel mix with apples over batter. Cover with rest the cheesecake batter. Bake at 350* for 40-60 minutes or til outer edge of cheesecake seems firm. Turn off oven, and open door. Let cheesecake gradually cool about an hour. When somewhat cool, refrigerate 12-24 hours before serving. Sprinkle remaining streusel mix over cheesecake. Sprinkle top with powdered sugar if desired.
