I apologize if this has been discussed before -- I didn't see any recent threads.
I want to buy Ceylon cinnamon (aka cinnamomum verum, or cinnamomum. zeylanicum) instead of the cheaper "Cassia cinnamon." I've checked with whole-food stores and markets nearby, and they don't carry it.
Are there some good, trustworthy sources that sell it online or by phone? (Anyone know about iHerb.com?)
Also, if I buy it in bulk, will it remain fresh, or does it require special storage?
I've been looking on the web, but I'm not sure exactly who I can trust, since I've never purchased spices or herbs online.
