Vitamix - making ice cream

I have a new Vitamix. I've tried making ice cream and sorbet, but just can't seem to get it to form into a frozen mix like it's demonstrated on TV. It never hardens - just stays in it's liquid form. Anyone know what I'm doing wrong?
