IMO, this is good news!
Pork hasn't been the same ever since the fat was bred out of it, & it was reintroduced as 'the other white meat'....& we were expected to cook it to death, almost guaranteeing dry, leathery meat.
Some restaurants have left a bit of pink for years now, though few home cooks have been comfortable doing so - & sometimes balk when they receive pink centered pork when dining out.
Sanction has been given to all! Yippee, & happy cooking!
