Question re sour cream soup garnish

I read a marvellous tip for applying a dollop of sour cream as a soup garnish in such a way that the cream didn't sink but remained afloat on top of the soup. For the life of me I cannot remember what it was. I think it was simple, maybe even obvious. Does anyone know?
