My pumpkin bread is baking now! It's killing me.

I love bread and this is a good recipe.

I like pumpkin bread, too!  I use a recipe that I got in one of those '50 Ways to...' booklets from the Food Network Magazine.

 

I also make a pumpkin bundt cake that I love.  That recipe isn't mine either.  It's a Betty Crocker recipe that, IIRC, somebody posted here several years ago.

Yum!!! Love Pumpkin Bread. The Penzey's cinnamon & cloves smells heavenly. DH made 2 loaves last month. He used shortening this time. I just made 2 loaves about 2 weeks ago & I used butter. I thought it was better made with real butter instead of shortening.

I use a recipe from my old Betty Crocker cookbook.

DH had changed the shortening to canola oil years ago. He was using 1 c. I don't use Canola oil anymore so I use butter. I asked DH how he came up with 1 c Canola oil since it lists 2/3 c shortening & he said he did not know. LOL!!! It still turned out really good. I still think less oil like using 2/3 c is better then using a whole cup.

 

Pumpkin Bread

 

2/3 c shortening (I use butter)
2 2/3 c sugar
4 eggs
1 can pumpkin (1 lb)
2/3 c water
3 1/3 c all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1 c chopped walnuts
 
Heat Oven to 350° Bake 70 mins or until toothpick comes out clean
Grease 2 -  9 x 5 x 3 loaf pans or 3 - 8 x 4 x 2.5 or 8 - 5 x 3 x 2 tinfoil pans
In large bowl mix oil & sugar, stir in eggs, pumpkin & water
Blend in flour, soda, salt, baking powder, cinnamon & cloves
Stir in nuts

@Nightowlz  Your recipe looks yummy.

 

I have a family recipe that makes 3 loaves.  It calls for oil, and has the addition of ginger and nutmeg as well.  Always a hit at work and church get togethers.  I'd make it more often but I'd probably eat all the 3 loaves!  Smiley Tongue

It is really good. The only one I have ever ate. Been making it for years.
