I've been limited to some houseplants sitting in my kitchen window sill and have grown quite tired of high priced, low quality herbs found in grocery stores, so I'm giving this a try. Any suggestions or tips for novices is appreciated.

@SydneyH. If you use basil you can stick the stems bought in the store in vase or jar of water on the sill, it will sprout and grow without soil. Then just pick leaves as needed. Don't let it bloom, pinch the flower heads off. If it gets too long and leggy just pinch it back half way. Change the water if it gets murky, you can also trim the roots if they seem too congested in the vase.
Basil and chives are easy to start from seed. Parsley takes a bit longer to germinate. Sage you might be able to start from a store bought stem pushed into pot of soil, stick several in same pot they won't all root.
