I grew up being exposed to foods from a few other countries, and DH and I have always been fans of international foods. My children also appreciate food from other countries. So my favorites:
Mexican - We lived in Texas; this is my #1 choice and my family would agree!
Japanese - I learned to cook "country Japanese" dishes when I taught there.
French - I lived there for a while in college.
German - My father was a member of the German-American club, and we got a feast when they had meetings twice a month!
Indian - DH's late stepmother grew up there.
Vietnamese - We love Pho. There was a restaurant in our town, but it closed.
I love to cook international dishes and regional American dishes, which usually have an ethnic background.

5) Tex-Mex
For Classical cuisine:
1) classic French
2) classic Italian
3) Nouvelle french cuisine
Vegan cuisine (since it's everywhere, i guess it qualifies as international):

Indian and Thai, partly because good restaurants serving this kind of food are very hard to find where I live.
I like some features of almost every cuisine there is. I may be happiest travelling in Italy, where the food is almost always simply wonderful and one doesn't have to pay a lot for a good meal, either.

Italian food as it's commonly served in the US has never been a favorite of mine. But from everything I have seen and heard (have not traveled there), I would probably love the food served IN Italy, which is quite different than ubiquitous "Italian restaurant(s)" in the US.
I'm spoiled for choice as far as Indian,Thai and Middle Eastern. Within 1-2 square miles there are easily a dozen or more of each.
