Turkey Joe's Recipe

My wife, Amy, is always creating amazing meals for the boys and I.  She knows the way to my heart with these hearty meals.  So I figured I would share another one of my favorites she makes for us.  Her Turkey Joe's!!

Amy's Note: 

This recipe is a great option for crazy nights at the Domeier house when Rick has to go into work in the evening, Josh is coming home from baseball and at the same time Nick is leaving to go to basketball practice.  I like to transfer the Turkey Joe’s into a crock pot on low so that we even if we can’t eat together, everyone is getting a hearty and healthy meal.

 

Ingredients

  • 2 ½ pounds ground turkey breast
  • 1 small red onion finely diced
  • 1 red or yellow pepper finely diced
  • 1 stalk of celery finely diced
  • 4 gloves of garlic minced
  • 1 cup of water
  • 1 ½ cups ketchup
  • 1 ½ tablespoons brown sugar
  • 5 dashes Worcestershire sauce or to taste
  • 2 or more teaspoons chili powder
  • Pinch or more of crushed red pepper
  • ½ teaspoon dried mustard
  • Salt and pepper to taste
  • 3 tablespoons of olive oil
  • Kaiser rolls
  • Add extra heat with hot sauce if desired

 

Directions

  • Heat 1tablespoon olive oil in a large skillet. Add onions, peppers and celery.  Cook on medium until soft.  Add garlic and cook until you smell the garlic.  Remove from pan.
  • Add remaining olive oil to the same skillet. Turn up the heat to high.  Add ground turkey breast.  Use a wooden spoon to break up the meat into small crumbles as it cooks completely (no pink!).
  • To the cooked meat add all dry seasonings and brown sugar -- stir.
  • To the meat mixture add back in sautéed veggies.
  • To the meat mixture add ketchup, water and Worcestershire sauce.
  • Let the mixture come to a bubble.
  • Either cover and lower temperature to simmer for 20 minutes and serve, OR transfer to crock pot on low and serve later…..
  • When serving toast your Kaiser roll, serve with green salad and fruit.
