The Basics: How to Steam an Artichoke

Steamed Artichokes

Serves 2 to 4           

 

Ingredients:

2 medium artichokes

1 lemon

3 sprigs fresh thyme

 

Directions:

  1. Prepare the artichokes by rinsing them well. Then, cut off the top inch of the artichoke and snip the thistle-y leaf tips. Cut off the stem to create a flat base (if you want the artichoke to sit up on a plate) or trim just the rough brown end.
  2. Place a rack in a large stockpot and rest the artichokes on top of the rack. Squeeze the lemon juice all over the artichokes and drop the squeezed halves into the pot around the artichokes along with the fresh thyme sprigs. Add water to the pot and cover with a lid. Turn the heat to high and steam the artichokes for roughly 30 to 40 minutes, depending on their size until the artichoke is tender to a knife point in its base.
  3. Before you transfer the artichokes to a serving dish, invert them over the stockpot to allow any hot water to escape from between the leaves. Serve with aïoli, Hollandaise sauce, butter or vinaigrette.
