String Beans alla Daniel

I love string beans and this time of the year they are available and at a good price, so I made some recipes. This is my recipe for string beans with black olives, garlic and fresh tomatoes done in that style I call, "Grandma Style". I serve these hot or even chilled. Either way they are just so delicious. You'll only need-

1-lb of fresh string beans trimmed 

5-garlic cloves sliced

1-pint of cherry tomatoes cut in half

1-cup of Gaeta Olives or any black olive you love, pits removed and cut in half

1/4-cup of extra Virgin Olive Oil

1-tsp salt

1/2-tsp black cracked pepper

Method-

1-In a large 12" skillet add the olive oil, garlic, tomatoes, olives, salt and pepper and sauté this 

   on a medium heat for 10 minutes. Using a wooden spoon crush the tomatoes as this cooks. 

2-Blanch the beans in a large pot of boiling water for 2-3 minutes. The longer you blanch them 

   the more well done they will be.

3-Add the beans to the skillet with 1/2 cup of the water they were blanched in

4-Sauté all this on a medium heat for 2-minutes then cover with a lid and cook for 1-minute. Or 

   cook longer for a more well done bean

5-Taste for salt and pepper and adjust

 

Serve immediately or chill for another day. A drizzle of olive oil and a squeeze of fresh lemon juice and some chopped parsley is always a great finish to this dish, but that's optional.
