Snack Attack... Round 2!

Ready for another Snack Attack?? I have more recipes for you that are clean, yummy AND easy to make!

Matcha Coco-Latte

1tsp matcha (it's a dried green tea powder...at most grocer's!)

1/4 cup hot water

1/4 cup warm coconut milk (other milks work too but I love the taste!)

sweetener of choice

Stir and serve with a couple of light tea-time cookies!

Pumpkin Spice Protein Poppers

(these remind me of the no-bake cookies my mom used to make! Only these are less likely to cancel out all the hard work you did at the gym lol)

1 1/2 cups old-fashioned oats

1 scoop of your favorite protein powder (vanilla or chocolate)

1 1/2 teaspoon pumpkin pie spice

1/2 cup agave syrup

1/2 cup nut butter

1/2 cup pumpkin puree (not pumpkin pie filling)

MIx and refrigerate for a half hour. Then use a cookie scoop to form small balls, and if desired dust with cinnamon. Store in an airtight container in fridge.

Banana "Bread" Donuts

1 cup flour

tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

4 packets stevia

1 egg

1 ripe banana

1/4 cup unsweetened applesauce (I was shocked how easy this is to make at home!)

1/4 cup melted coconut oil

1/4 cup vanilla almond milk

1 tsp vanilla

Honey or agave syrup

Preheat oven to 350. Mix together dry ingredients in one bowl and wet in another except for honey/agave. Spoon batter into a donut pan and bake for 20 minutes. Let cool and drizzle with honey if desired.
