Smashed Sweet Potatoes

Do you need a yummy recipe that taste good and is easy to make?  Well, I was watching the "Chew" with our friend Clinton Kelly the week before Thanksgiving and they were making smashed sweet potatoes. So I googled recipes online to see if I could find one that was similar. Here is the one I tried but I tweaked it a bit.  It really is easy to make, you just have to watch them and they are in and out of the oven several times.

Smashed Sweet Potatoes

 

Ingredients:

3-4 large sweet potatoes

Olive oil (spray)

3 tbsp butter (melted)

3-4 cloves garlic (crushed)

1 tbsp chopped parsley

 

2 tbsp Parmesan cheese

Salt and pepper to taste

 

Directions: 

 

Pre-heat your oven to 400 degrees. Cut off the ends of the sweet potatoes. Cut each sweet potato into 1½" pieces. Bake sweet potato pieces for 25-30 minutes, or until they are fork tender. Allow to cool for about 5 minted, or until you can handle them without burning your hands.

 

Lightly grease a large baking sheet or tray with cooking oil spray. Arrange sweet potatoes onto the sheet and use a fork to LIGHTLY flatten each piece (they will be soft, so try not to press too hard or they will end up breaking and mashed).  Mix together the butter, garlic and parsley. Pour the mixture over each sweet potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.

 

Bake them until they are golden and crispy (about 15 minutes). Remove from oven, sprinkle with Parmesan cheese and return to the oven until the cheese is melted.
