Pressure Cooker Pulled Pork Carnita’s

My sister made the slow cooker version of this.  It sounded so good I decided to give it a try but I didn’t have 8 hrs. to let the pork cook so…Pressure cooker to the rescue!!!  The pork has a nice crispiness on the outside but is moist and tender on the inside.  You can add more chili powder and peppers if you want it spicy.

Pressure Cooker Pulled Pork Carnita’s

 

3-4 pound pork shoulder

1 tsp salt

1 Tb. oil

2 cups water

3/4 cup orange juice

1/4 cup lime juice

4 cloves garlic, chopped

1 Tb. chili powder

1 tsp. cumin

1/2 tsp. pepper

 

Cut the pork into cubes, approximately 3 inches.  Set pressure cooker to  brown/saute.  Heat the oil in the pressure cooker, add pork in small patches, sear on all sides. ( My pressure cooker is only 6 quarts, it takes a while to brown 4 pounds of cubed pork so I also used a skillet on the stove to get it done faster). After all the meat is browned, deglaze the pressure cooker and/or pan with 1 cup of water.  Get all of the brown bits from the bottom of the pan.  Add the meat and all other ingredient to the pressure cooker.  Set the pressure cooker to 20 minutes.  Manually release the pressure. Remove the pork from the liquid, set aside.  Set the pressure cooker to brown/saute, reduce the liquid.  Shred the pork and spread it out on a baking pan, brushed the reduced liquid over the pork, broil until crispy on top, flip and do the same on the other side, 4-6 minutes on each side.  I used soft taco shells and topped them with lettuce, tomatoes, cheese and sour cream.  Enjoy!
