Play with Your Food: Banana Muffins

I’m going to start a blog series called "Play with Your Food". I want it to be about making cooking, baking, and all things kitchen-creative FUN. I also want it to be about recipe alternatives: gluten free, vegan, low-carb, and “playing” with different ingredients. I sure have learned a lot over the last few years here at QVC and I want to pass it on and SHARE!

 

This past weekend, I made the best banana muffins of MY LIFE. I posted a photo to Instagram and I’ve gotten lots of requests for the recipe. It’s pretty simple, gluten free, and makes use of leftover bananas. Feel free to double it, cut it in half, and/or alter it any way you like! Here goes…

 

Ingredients

5-6 very ripe, medium-sized bananas (they have to be at least ripe enough to have leopard skin!)

1 heaping cup of sugar in the raw

1 large egg

2/3 cup of melted butter

1.5 cups of gluten free flour (I use all-purpose Bob’s Red Mill flour)

1 teaspoon vanilla

1 teaspoon baking soda

1 teaspoon salt

OPTIONAL: half cup GF quick oats – for texture

OPTIONAL: quarter cup chocolate chips – because it’s chocolate

 

Directions

Peel the bananas and toss them in a bowl. Heap the sugar on top. Using an immersion blender, mix the bananas and sugar together until smooth. Using a spoon or spatula (your preference) beat in the egg, butter, and vanilla.

 

Now it’s time for the dry ingredients. You don’t need a separate bowl! Dump in the GF flour, baking soda, salt and mix it all together.

 

Now is the time to add in either (or both) of the optional ingredients if you’d like. I ALWAYS recommend chocolate… Let the mix sit on the counter for about 10 minutes.

 

Gluten free baking ingredients always bake up better if they get some “settling” time. I used a Texas-size muffin pan, but a regular size will do just fine too. Fill the individual tins up just a little more than halfway each.

 

Bake 20-25 mins at 350. Keep an eye on it for browning. I like mine just slightly gooshy inside and I have a gas oven, so it took me about 20 minutes to bake them through, but just watch the tops!
