Mini Apple Tarts

I am hosting a book club in a few weeks and I reached out to a friend to test some easy desserts to make.  Here is one of them. Very yummy!! Please share with me any suggestions for quick, easy snacks for my book club meeting.

Mini Apple Tarts

 

Ingredients

2 large apples

Lemon juice

Prepared biscuit dough (1 can)

Powdered sugar

 

Instructions:

Preheat oven to 350 degrees.  Spray and flour mini cupcake pan

 

Step 1:  Open a premade roll of dough (biscuits), place on cutting board and cut into  1-1/2 inch sections.  Put 4 sections into each mini cupcake pan, overlapping creating a shell.

Step 2: Cut 2 large apples in very thin slices keeping skin on them.  Put apples in a pan and squeeze  lemon juice on top, then coat with generous amount of  cinnamon sugar mixture. Stir and flip to coat the apple slides on all sides and let sit in mixture for 10 mins.. add more lemon juice/cinnamon sugar to make sure thoroughly coated.  The slices should be pliable.  If after 10 mins the apple slices are too stiff put them in a microwave safe container and microwave for 20-30 seconds.. be careful they will be HOT coming out but will cool down in a few seconds in order to work with them.IMG_5765.JPG 

Step 3: Arrange 10 slices lengthwise in a straight line overlapping each other and then roll them up  carefully put the rolled apple into the prepared pie shell.  Note if it falls apart no worries just put in the mini shell because it will still work out nicely.  Sprinkle with sugar. IMG_5766.JPG

Step 4: Bake at 350 degrees for about 30 mins until the crust is golden and apples have cooked.,  remove from oven, let  the mini pies cool in pan for 30 mins and then transfer them to wire rack.  Dust each with powdered sugar. mini tart.jpg
