Hot Turkey Salad Recipe

I’m always looking for a way to use leftover turkey after Thanksgiving. This casserole came straight from my Grandmother’s recipe box…she always made the best casseroles!

 

2 c. chopped turkey

2 c. chopped celery

1/2 c. mayonnaise

1/2 c. chopped toasted almonds

1/2 tsp. salt

1/4 tsp. black pepper

1/2. c. shredded cheddar cheese (pepper jack is good in this too!)

1/2 c. crushed potato chips

 

Preheat oven to 350. Combine all ingredients except cheese and chips. Spoon into buttered 1 1/2 quart casserole dish.   Cover with foil or lid and bake for 15 minutes until heated through. Remove cover, sprinkle with cheese and chips, leave uncovered and bake for about 5 more minutes until cheese melts and chips brown slightly. Makes 4-5 servings.
