Gratitude Changes Everything

November has always been a very special month to me, but this year it's extra sweet! I became a Godmother, for the first time, to twins - a boy and girl, I celebrated my 31st bday, and now am looking forward to my favorite holiday! This year I'll be spending Thanksgiving with my husband's family and I'm so excited that my younger sister Kaysie will be joining, all the way from Alaska! It feels like a year since I saw her last and I can't wait to catch up. My sisters and I have always been close despite the distance between us. It's so nice having people around you who understand your quirky jokes and can complete your sentences. I'm incredibly grateful for these blessings in my life and look forward to quality time with my family… oh and lots of pumpkin pie!

 

Favorite Thanksgiving Memories

My favorite Thanksgiving memory was two years ago when my husband Sean proposed. We were at his family’s house in Ohio. He wanted to take me on a walk through the woods by his home to show me where his parents had carved their initials when they were in high school. I was reluctant to go because it had just snowed, it was a winter wonderland outside. What can I say, you can't take the California out of me, it was cold! With no makeup on, I quickly got dressed and grabbed our cockapoo Carly for the walk. Little did I know that he had a big surprise for me. He told me to look up once we arrived at the wooden pavilion, and that's when I saw the question “Lindsay, will you marry me?” Before I knew it, he was down on one knee with a beautiful ring and I was on cloud 9 all day!

Four years ago, I had the honor of announcing the Victoria’s Secret Fashion show during the Macy’s Day Parade in Times Square. It’s a tradition that one Angel per year is chosen for. I’ve watched the parade on TV since I was a little girl so it was pretty surreal to see the giant characters floating by! I still managed to hop on a flight to California and make it home right on time for Thanksgiving dinner.

Family Tradition

 

Every year my mom makes lefse, it's a Norwegian treat we’ve all enjoyed since we were kids. The recipe has been passed down in my family for generations. It's a very thin potato pancake that you spread with butter and a sprinkle of sugar then roll up and enjoy. I will definitely be missing it this year, but she always saves enough for Christmas! Family Recipe

 

I’m sure many of you can relate to me when I say, I love pumpkin anything! Everything from pumpkin picking, roasted pumpkin seeds, cookies, pancakes, breads, pie and more. My mom’s pumpkin pie is so delicious! It’s a family recipe that she adds her unique twist to - fresh squeezed orange juice and crust made from scratch. I’m so excited to share a bit of my Thanksgiving with you. Let me know how you like it in the comments below, and don’t forget a dollop of whipped cream to top it off.

 

Julie’s Orange Pumpkin Pie

 

2 eggs, beaten

1 ½ cups canned or cooked pumpkin

1 cup sugar

¾ teaspoon nutmeg

½ teaspoon ginger

½ teaspoon cloves

¾ cup evaporated milk

¾ cup fresh squeezed and strained orange juice

 

Preheat oven to 450 degrees. Combine eggs, pumpkin, sugar and spices; blend well. Blend in milk and orange juice. Pour into pie shell. Bake 10 minutes. Reduce heat to 350 degrees and bake 40-50 minutes longer.
