Ginny's Irish Soda Bread

My Mother taught at her alma mater, Immaculata University. This is a recipe she shared with her Freshman class.  I love it for the holidays since it makes two loaves, one to eat and one to give!!

Ginny's Irish Soda Bread

(makes two loaves, each serving 8)

 

Ingredients:

2 cups all purpose flour

1/2 cup sugar

1 teaspoon salt

1 tablespoon caraway seeds 

1/4 cup butter

1 cup raisins

3/4 cup buttermilk

1 egg

3/4 teaspoon baking soda

1/2 teaspoon cinnamon sugar

 

Directions:

Preheat oven to 350 degrees. Sift together flour, sugar and salt. Add caraway seeds to flour mixture. Cut in butter with pastry cutter to flour mixture. Add raisins. In a separate bowl, combine buttermilk,egg and baking soda and mix together.  Add to flour mixture.

 

Grease two 8x4 inch loaf pans and divide batter between the two pans. Sprinkle with cinnamon sugar (you can add more if you like!) Bake at 350 for about 30 minutes or until toothpick inserted in center comes out clean.
