Don't read on an empty stomach! (Our Christmas Dinner)

While we celebrated Jesus' birthday we thanked him for such abundance in our bellies!  Christmas Eve and Christmas was 48 hours of pure indulgence.  We plan for it for months and every year it’s the yummiest two days of the season.  I snapped pictures this year to share with you.  Caution: Don't look on an empty stomach!

 

On Christmas Eve, we always do the Italian tradition of the feast of seven fishes.  It started when we moved to Las Vegas, next door to an Italian couple, who then became our best friends for the rest of our lives. We always did Christmas Eve with them and they taught us the feast.  Even though Italian is the one thing we don't have in our family (German, Irish, Chezch, Mexican, English.... we have almost everything else) we still go Italian one day a year. 

 

Our seven (really 8) this year were:

Ceviche

Crab

Lobster

Smoked Oysters

Shrimp Cocktail

Caviar

Stuffed Clams 

And the one I forgot to snap a picture of... Steelhead Trout.

My favorite in the bunch?  The stuffed clams and my hubbies homemade ceviche.  So so good!

Rachel was with us for both nights and she doesn't eat fish so we also made her a filet, and we always, always have a yummy salad with toasted almonds (my step moms secret.)

Christmas Eve was also the night for Champagne...and more Champagne!

We also do a Happy Birthday Jesus cake on Christmas Eve, a tradition started by my mom and one of my favorite parts of Christmas.

On Christmas morning we enjoyed cinnamon rolls, croissants and a frittata.  That frittata was made with spinach, cheese and the left the over filet.  It went so fast I nearly missed the picture!

I also received a special coffee maker from Italy, from Santa, since I'm kind of on a coffee kick. I’m only drinking it black so I’m slightly obsessed with getting the best flavor.

Christmas night we once again welcomed Rachel to the table. I decorated with our new nautical themed place mats.  Aren't they darling?

We enjoyed a juicy prime rib and indulgently seasoned string beans. I’m not a big meat eater so I had a bunch of left over shell fish and a huge salad.

We also enjoyed some leftover cake and sweets that Rachel brought and were my kids favorite; Christmas rice crispy treats.
