Chicken & Peas Pasta

Do you like peas?  I love them. Here is a great recipe that we served hot the first day and cold the next.  Making it a good dish anytime of the year.

Chicken & Peas Pasta

Ingredients

10 ounces wide pasta

2 cups cooked chicken shredded (breasts work best)

1 tsp olive oil

1 minced garlic clove

1 cup chopped fresh spinach

2 cups of fresh or frozen peas

1-1/2 cups of ricotta cheese

1/3 cup grated parmesan cheese

salt

 

DIRECTIONS

Bring a large pot of salted water to a boil and cook the pasta according to package directions.

In a medium pan, saute the garlic in the olive oil over medium heat until fragrant, about 1 minute. Add the peas and spinach along with a pinch of salt and cook about 2 minutes. Remove from heat and set aside.

Toss chicken, pasta, peas & spinach mix with ricotta cheese.  Top each plate with Parmesan.  Enjoy!!
