Chicken & Broccoli Stir Fry

I love stir-fry but surprisingly have not made it in a long time.  This is an easy one-pan recipe that you might even be able to get the kids to try.

Chicken & Broccoli Stir Fry

 

1 lb. boneless, skinless chicken breasts, cut into ¾ in pieces

2 cups broccoli florets

1 cup mushrooms, sliced

¼ cup flour

1 cup chicken stock

¼ cup honey

¼ cup Soy sauce

1 tsp fresh ginger

2 garlic cloves, minced

olive oil

salt & pepper, to taste

 

I a large bowl, coat the chicken pieces in flour.  (Save the flour left in the bowl for the sauce) Sauté chicken in olive oil until browned on all sides.  Set aside.  Add broccoli, onion & mushrooms to the pan, sauté until the broccoli is to desired consistency.  In the bowl with the leftover flour add, chicken stock, soy sauce, ginger, honey and garlic.  Mix until smooth.  Pour sauce over the broccoli; bring to a boil stirring until sauce thickens.  Add chicken, toss to coat.  Serve over rice.
